Yogurt or milk, fruit and granola are one of the most popular and common breakfasts one can think of. It is also common “knowledge” that such breakfasts are healthy. Or at least thought to be. But if you look at the ingredients of your store bought granola or müsli or corn flakes or whatever you call them, you will see that the sugar content is extremely high. That is why I decided to start making my own granola. At least that way I know exactly what I am eating.
I came across this really simple recipe and adapted it a little, using the nuts I had in my pantry and omitting the coconut flakes and ever since this is the only granola I have for breakfast. Try it and I am sure you will to.
2 cups oats
2 cups pecans
1 cup brazil nuts
1 cup sultanas
1/4 cup chia seeds
2 heaped tablespoons Cacao Powder
1/4 cup coconut oil
4-6 Tablespoons of Agave or Pure Maple syrup
1. Preheat your oven to a 180 degrees. Start by adding your oats, nuts and sultanas to a food processor and pulse until small chunks. Don’t over process, you still want some large chunks of nuts and dried fruit! Mix in a bowl with the chia seeds.
2. Then in a saucepan, combine the coconut oil, cacao powder and fruit syrup. Heat until the coconut oil is melted. Pour into the dry ingredients and mix until everything is well coated.
3. Place the mixture on a lined baking tray and place in the oven to cook for around half an hour.
I usually have my granola with some Greek yogurt and fresh fruits, arranging them in pretty patterns or parfaits. Here are some serving suggestions.
