Zoodles are a big hit at the moment. Everybody knows about them, everybody wants to try them. We have to admit that they taste nothing like traditional noodles. But how could we expect them to, they are made of zucchini after all. But they make for a fun and delicious alternative and can be refreshing especially in the summer.
Ingredients (serves 1):
1 medium zucchini
2 eggs, beaten
1/3 cup bacon, sliced
1. Using your vegetable noodles maker, make zucchini noodles out of ¾ of the zucchini.
2. Heat a large pan over medium heat. Add sliced bacon and cook until golden brown. Remove from pan and set aside
3. Add the beaten eggs to the same pan and while mixing all the time to prevent it from making large pieces of baked egg, add in the zoodles and keep mixing. At the very end, add the bacon and serve immediately.
