Protein Chocolate Coconut Muffins

I have to admit I never actually made these muffins myself (yet!). My boyfriend spoiled me with them a couple of times now, so this is his recipe. He found it on Fit, happy and healthy Facebook page and, like always, changed the recipe a little and added most of the ingredients without measuring them (which is why the recipe does not have exact amounts). Oh, and he also said, that a very important ingredient is LOVE and that without it, these muffins won’t turn out right. He should know! Anyway, I suggest you try making them and see for yourself <3.

Ingredients:

4 eggs

3 bananas

1 scoop coconut protein powder

2 scoops chocolate protein powder

1/2 package baking powder

About 1/2 cup cocoa powder

About 1 cup coconut flakes

(lots of love)

Instructions:

1. Mix all the above ingredients in a blender, with a hand mixer or stick mixer. Pour the batter in muffin forms (preferably heart shaped) and bake for 15 minutes at 180 degrees Celsius.

2. Remove from the baking tray and cover with warm raspberries or sour cherries and serve with a side of vanilla greek yoghurt or vanilla ice cream and some homemade fruit salad.
